微型創業－OBS烘焙教室 傳遞幸福好滋味

近年來食安風暴不斷，自己動手做不僅能享受料理的過程，還能將安心、健康、美味分享給所愛的人，傳遞幸福的好滋味！這就是OBS烘焙教室成立的初衷。
從情人節必備的「絲絨巧克力」，甜點界的明星「經典布朗尼」和「提拉米蘇」，到「完美人妻泡芙」、「關西日出麵包」…等，20坪大小的烘焙教室，至今已開出超過150種甜點、麵包課程，累計學生逾4,000人次。
OBS烘焙教室創辦人蔡佳峰說，每當做出好吃的甜點、麵包，看到學生臉上開心的表情，就讓她打從心裡感到快樂！
事實上，外型姣好的蔡佳峰曾是一名珠寶設計師，任職於日本知名珠寶企業，3年多前轉戰烘焙領域，原因無他，正是因為自己也非常喜歡吃，還先後到紐約、日本學習烘焙知識技術，並取得日本權威廚藝教室ABC甜點、麵包執照。
回台後，最初蔡佳峰只想擁有一間烘焙工作室，可以做做自己想吃的東西，也分享給家人朋友。不料，因位於大廈一樓，鄰居路過都不斷詢問是否有開班授課？在廣大「粉絲」的推波助瀾下，OBS烘焙教室於2012年6月正式成形，有學生一上就是3年，甚至還有學生遠從屏東、高雄、台東…等地，特地搭車北上。
首先，有別於一般廚藝教室，動輒15∼20人的「示範課程」（老師做給學生看），蔡佳峰堅持6人小班制，每位學生都能夠擁有一份專屬的食材跟器具，自己動手操作；食材方面更是不計成本，嚴選來自法國、日本等專業級的原料，且會清楚向學生說明每一種食材的特性與特色。
為了讓教學流程順暢，每一堂課成形前，蔡佳峰至少會先試作10次以上，調整操作步驟，並與同事開會討論教學SOP，確保2.5小時的課程內不會忙亂，讓學生在更輕鬆、無壓力的情況下學習，因為她說，做甜點就是要開心！且每一堂課前，還得花1.5∼3個小時準備食材，相當耗時。
也許是從小學美術長大，加上在紐約念珠寶設計的薰陶，蔡佳峰對於包裝特別重視。一般的手作教室大多會使用保鮮盒盛裝，反正是自家人要吃，但在OBS上完課的學生，每一份帶回去的成品，就像從高級甜點、麵包店買回家的一樣精緻！不僅有專屬包裝盒，還有緞帶、貼紙等裝飾。
因廣受學生好評，OBS烘焙教室成立至今3年多，營業額呈現穩定成長。為了讓學生有不同的課程體驗，蔡佳峰月月都會推出新課程，平均每月開30∼33堂課，幾乎天天都有課可上，但還是場場爆滿。
為此，OBS烘焙教室將於9月中搬遷到更大地方，同樣位於內湖民權東路6段上，但空間是現在的兩倍大，仍維持小班制上課，但有更寬敞舒適的空間，希望帶給學生更好的學習環境與品質。
談到創業最辛苦的部分，蔡佳峰笑著說，這完全是「體力活」！平均每天工作14∼15個小時，且過程中幾乎都要站著，當下不覺得累，直到回家癱軟在沙發上，才發現雙腿已痠痛不已。但她說，這是她的興趣，也是自我實現的一部分；對於未來，她不設限，只想繼續開心做好吃又健康的甜點，和更多人分享！
